Dinner is Served!


Chicken ~N~ Biscuits

For dinner tonight, I needed to make something soft that Casey could eat.  His mouth is a little tender with his new braces, so I thought a good chicken noodle soup would do?  Casey thought that would be too blah.

I boiled up some chicken breast until it was falling off the bone.  That equals...put it on low and forget it about it for an hour or two.  That gives you time to figure out what you are going to make for dinner.  :)

Remove the chicken from the broth and set aside.  Toss some chopped carrots and potatoes, peas and green beans into the broth and keep simmering.  I like to add celery too, but I did not have any on hand.

Keep simmering so that the veggies cook through.  This give you a little more time to figure out what you are going to make for dinner.

Add some oil to a skillet and saute some garlic and onion.  Toss in the shredded chicken and add salt, pepper, and whatever other spices you like.  I like to add a pinch of curry and nutmeg.

Saute for a few minutes, than add some fresh spinach.  Stir until cooked through.

Layer the chicken mix on the bottom of a baking pan.


Make a rue in the frying pan with some butter and flour, then deglaze with some milk and make a nice creamy gravy.  (You add a can of cream of chicken soup if you have some.)

Pour your cooked vegetables over the chicken in the baking dish.  Pour the gravy over the top.  Then plop some simple Bisquick drop biscuits as the final layer.
(Simple Bisquick Drop biscuits is simply mixing Bisquick with milk)

Plop, plop ploppity plop.
Place in a 350° oven, bake until the biscuits are brown.
 Serve it up, and enjoy.
